Cherry Lime Dirty Soda

18 servings (4 grenadine cubes + 4 cream cubes per serving)

Ingredients

Cream Cubes (Batch):

  • 3 ¾ cups (937 mL) Lactantia 18% Table Cream
  • 3 ¾ cups (937 mL) Lactantia 35% Whipping Cream
  • 1 cup (200 g) sugar
  • 2 ½ cups (690 mL) grenadine

Soda:

  • 1 ⅓ cups (325 mL) lime juice
  • 15 × 12 oz (355 mL) cans Sprite

Garnish:

  • 3 ¾ cups (938 mL) Lactantia 35% whipping cream, whipped (optional)
  • 18 maraschino cherries
  • Lime zest, as needed

Directions

  1. Wash hands thoroughly and sanitize all work surfaces and equipment. Use designated cutting boards for products being used.
  2. In a large mixing bowl, combine table cream, whipping cream, and sugar. Stir until sugar is fully dissolved.
  3. Divide mixture evenly into two separate bowls.
  4. Add grenadine to one bowl and mix until fully incorporated. Leave the second bowl plain.
  5. Pour each mixture into silicone molds, ensuring even distribution.
  6. Freeze for a minimum of 4 hours or overnight, until completely solid.

For Service:

  1. Place 4 grenadine cream cubes into a 12 oz (355 mL) glass.
  2. Add 4 plain cream cubes.
  3. Pour in 1 ½ tbsp (22.5 mL) lime juice.
  4. Top with 1 can (12 oz / 355 mL) Sprite.
  5. Garnish with whipped cream (if using), 1 maraschino cherry, and lime zest.
  6. Serve immediately.
