Winter Cheese Fondue

Ingredients

Fondue Base (pre-portioned):

  • 1 cup Galbani Mozzarella Cheese Shreds
  • 1 cup Balderson Cheddar Cheese, grated
  • 3 tbsp cornstarch
  • ¼ tsp nutmeg

To Cook:

  • ½ cup dry white wine

Directions

  1. Wash hands thoroughly with soap and warm water for 20 seconds.
  2. Sanitize all work surfaces.
  3. Use a white cutting board to grate the cheddar, if grating fresh.
  4. Combine Mozzarella, Cheddar, cornstarch, and nutmeg in a portioned container.
  5. Seal and refrigerate until service.
  6. For Service:
    • Pour the white wine into a small pot or fondue pot.
    • Bring to a boil over medium-high heat, then reduce to a simmer.
    • Add the cheese mixture gradually, stirring continuously until fully melted and smooth.
    • Transfer to a heated fondue pot for serving.
    • Serve immediately with sausage, bread, and apples.
  7. Discard any uneaten fondue after 2 hours at room temperature.
