
Winter Cheese Fondue

Ingredients
Fondue Base (pre-portioned):
- 1 cup Galbani Mozzarella Cheese Shreds
- 1 cup Balderson Cheddar Cheese, grated
- 3 tbsp cornstarch
- ¼ tsp nutmeg
To Cook:
- ½ cup dry white wine
Directions
- Wash hands thoroughly with soap and warm water for 20 seconds.
- Sanitize all work surfaces.
- Use a white cutting board to grate the cheddar, if grating fresh.
- Combine Mozzarella, Cheddar, cornstarch, and nutmeg in a portioned container.
- Seal and refrigerate until service.
- For Service:
- Pour the white wine into a small pot or fondue pot.
- Bring to a boil over medium-high heat, then reduce to a simmer.
- Add the cheese mixture gradually, stirring continuously until fully melted and smooth.
- Transfer to a heated fondue pot for serving.
- Serve immediately with sausage, bread, and apples.
- Discard any uneaten fondue after 2 hours at room temperature.
