Stuffed French Toast

Ingredients
For the Filling:
- 8 oz (250 g) Lactantia Cream Cheese, room temperature
- 1 ½ cups (185 g) strawberries, sliced
- ½ cup (47 g) sliced almonds
- ½ cup (80 g) chopped semi-sweet chocolate
- 1 tsp (4 g) vanilla extract
For the French Toast:
- 1 loaf of bread, sliced 2 inches thick
- 4 large eggs (200 g)
- ½ cup (127.5 g) Lactantia 35% Whipping Cream
- 2 tbsp (35 g) maple syrup
- 1 tsp (2 g) cinnamon
- 3 tbsp (30 g) Lactantia Unsalted butter, divided
For Garnish:
- Whipped cream
- Additional strawberries
- Maple syrup
Directions
- Prepare the Filling: In a bowl, gently combine the cream cheese, strawberries, sliced almonds, chopped chocolate, and vanilla extract.
- Prepare the Egg Mixture: In a wide, shallow bowl or pan, whisk together the eggs, whipping cream, maple syrup, and cinnamon.
- Prepare the Bread: Cut each slice of bread in half to create a pocket. Pipe approximately 4 tbsp of the cream cheese mixture into each pocket.
- Cook the French Toast: Heat a pan over medium-low heat and melt 1 tbsp of butter. Coat each stuffed bread slice with the egg mixture and cook in the pan until golden brown on both sides, adding more butter as needed.
- Garnish and Serve: Garnish with whipped cream, additional strawberries, and shaved chocolate. Drizzle with extra maple syrup.
