Shaved Brussels Sprout Salad with Parmesan

Ingredients

  • 1 lbs Brussels sprouts, rinsed and trimmed
  • 2 lemons, zested
  • ¼ cup lemon juice
  • ¼ cup extra virgin olive oil
  • ¼ tsp sea salt
  • ½ cup Galbani shredded Parmesan
  • Pepper to taste

Directions

  1. Thinly slice the Brussels sprouts to about 1/16 inch thickness using a sharp knife or mandolin. Place them in a large bowl.
  2. In a small bowl, whisk together the lemon zest, lemon juice, olive oil, and salt.
  3. Drizzle half of the dressing over the sliced Brussels sprouts. Let sit for 5 minutes, then taste.
  4. If needed, add more dressing to your liking.
  5. Once dressed to taste, sprinkle in the Parmesan cheese and adjust seasoning before serving.
