
Shaved Brussels Sprout Salad with Parmesan

Ingredients
- 1 lbs Brussels sprouts, rinsed and trimmed
- 2 lemons, zested
- ¼ cup lemon juice
- ¼ cup extra virgin olive oil
- ¼ tsp sea salt
- ½ cup Galbani shredded Parmesan
- Pepper to taste
Directions
- Thinly slice the Brussels sprouts to about 1/16 inch thickness using a sharp knife or mandolin. Place them in a large bowl.
- In a small bowl, whisk together the lemon zest, lemon juice, olive oil, and salt.
- Drizzle half of the dressing over the sliced Brussels sprouts. Let sit for 5 minutes, then taste.
- If needed, add more dressing to your liking.
- Once dressed to taste, sprinkle in the Parmesan cheese and adjust seasoning before serving.
