Holiday Cheese Fondue

Yield: 4 cups (940 g), serves 8

Ingredients

  • 5 cups (150 g) Black Diamond Cheddar Cheese, medium shred (orange)
  • 5 cups (150 g) Black Diamond Processed Cheddar Canadian Cheese, grated (white)
  • 5 cups (150 g) Cracker Barrel Asiago Cheese, shred
  • ½ cup (85 g) all-purpose flour
  • ¼ tsp (0.5 g) mustard powder
  • 1 tbsp (12 g) butter
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 4 sprigs thyme
  • 1 ½ cups (360 g) dry white wine
  • ⅓ cup (85 g) vegetable stock
  • ⅓ cup (85 g) Lactantia 35% cream

Directions

  1. Prepare the cheese: In a bowl, combine the cheeses with the flour and mustard powder. Toss to coat the cheese evenly.
  2. Cook the aromatics: In a medium saucepan over medium-low heat, melt the butter. Add the spices and thyme. Cook for 30 seconds.
  3. Add liquids: Pour in the white wine and simmer for 5 minutes. Stir in the vegetable stock and cream.
  4. Add cheese: Reduce the heat to low and gradually add the cheese mixture in batches, stirring continuously until completely melted and smooth.
  5. Serve: Transfer the melted cheese mixture to a fondue pot and serve with your choice of sides.

Tip: Get creative with your fondue accompaniments. Try apples, cooked sausage, boiled mini potatoes, cooked broccoli, cooked cauliflower, or bread.
