Holiday Cheese Fondue
Yield: 4 cups (940 g), serves 8
Ingredients
- 5 cups (150 g) Black Diamond Cheddar Cheese, medium shred (orange)
- 5 cups (150 g) Black Diamond Processed Cheddar Canadian Cheese, grated (white)
- 5 cups (150 g) Cracker Barrel Asiago Cheese, shred
- ½ cup (85 g) all-purpose flour
- ¼ tsp (0.5 g) mustard powder
- 1 tbsp (12 g) butter
- 1 tsp onion powder
- 1 tsp garlic powder
- 4 sprigs thyme
- 1 ½ cups (360 g) dry white wine
- ⅓ cup (85 g) vegetable stock
- ⅓ cup (85 g) Lactantia 35% cream
Directions
- Prepare the cheese: In a bowl, combine the cheeses with the flour and mustard powder. Toss to coat the cheese evenly.
- Cook the aromatics: In a medium saucepan over medium-low heat, melt the butter. Add the spices and thyme. Cook for 30 seconds.
- Add liquids: Pour in the white wine and simmer for 5 minutes. Stir in the vegetable stock and cream.
- Add cheese: Reduce the heat to low and gradually add the cheese mixture in batches, stirring continuously until completely melted and smooth.
- Serve: Transfer the melted cheese mixture to a fondue pot and serve with your choice of sides.
Tip: Get creative with your fondue accompaniments. Try apples, cooked sausage, boiled mini potatoes, cooked broccoli, cooked cauliflower, or bread.
