Healthy Apple Pie Fall Smoothie

Yield: 2 ½ cups

Ingredients

  • 2 (360 g) Honeycrisp apples, cubed
  • 1 tbsp (14 g) brown sugar
  • 2 tsp (8 g) vanilla extract
  • 1 tsp (2 g) cinnamon
  • ¼ tsp (1 g) nutmeg
  • ⅛ tsp (0.5 g) cardamom
  • 1 cup (260 g) Olympic 3.5% Plain Yogurt
  • ½ cup (113 g) Beatrice 2% Cottage Cheese
  • ½ cup Lactantia 2% milk
  • 1 cup (160 g) ice

Garnish:

  • ¼ cup (70 g) Lactantia 35% Whipping Cream
  • A pinch of ground cinnamon

Directions

  1. Preheat the oven: Set your oven to 350°F (180°C.)
  2. Prepare the apples: In a bowl, toss the cubed apples with brown sugar, vanilla extract, cinnamon, nutmeg, and cardamom until evenly coated.
  3. Bake the apples: Spread the coated apples on a parchment-lined baking sheet. Bake for 15 minutes, or until the apples are fork-tender. Remove from the oven and let them cool.
  4. Blend the smoothie: Once the apples have cooled, add them to a high-speed blender along with the yogurt, cottage cheese, milk, and ice. Blend until smooth.
  5. Serve and garnish: Pour the smoothie into glasses. Garnish with a dollop of whipping cream and ground cinnamon.
