Cheddar and Chive Scones

Ingredients
- 250g pizza dough, divided into 4
- 1 ⅓ cup pizza sauce, heated
- 1 ⅓ cup Racolli Pizza Mozzarella
- Basil leaves, torn
Preparation
- Preheat oven to broil and place a cast iron skillet inside to heat up.
- In a shallow pot or deep fryer, heat oil to 350°F.
- Turn out your pizza dough and shape into 8-10 inch circle so it fits in your fryer.
- Carefully place dough into the fryer, slowly so you do not burn yourself. Spoon hot oil generously on the top.
This ensures a soft fluffy inside and crip outside. Flip often to ensure a nice golden colour. Once done, remove from the fryer and top with cheese, then heated sauce, some additional mozzarella. - Broil on top rack for 45 seconds or until the cheese is melted and bubbly. Remove from the oven, top with fresh torn basil and serve
