Chicken Ranch Wrap

Ingredients

Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp each, salt and pepper
  • ¼ cup (70 g) Lactantia 35% Whipping Cream
  • A pinch of ground cinnamon

Ranch Dressing

  • ¾ cup Greek yogurt
  • ¼ cup Beatrice Buttermilk
  • 1 clove garlic, minced
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh dill, chopped
  • 1 tsp lemon juice
  • ¼ tsp each, salt and pepper

Wrap

  • 4 large flour tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 8 slices pre-cooked bacon
  • 1 cup shredded Black Diamond Monterey Jack Cheese with Red bell and Jalapeno Peppers
  • Additional fresh chives, parsley, or dill for garnish

Directions

For the Chicken

  1. Preheat grill or stovetop pan over medium-high heat.
  2. Mix olive oil, garlic powder, onion powder, paprika, cayenne (if using), salt, and black pepper in a small bowl.
  3. Coat the chicken breasts with the seasoning mixture.
  4. Grill the chicken for approximately 6-8 minutes per side until it reaches an internal temperature of 165°F and is no longer pink in the centre.
  5. Remove the chicken from the grill, let it rest briefly, and then slice it into thin strips.

For the Ranch Dressing

  1. In a bowl, whisk together yogurt, buttermilk, garlic, chives, fresh parsley, dill, lemon juice, salt, and black pepper.
  2. Adjust the seasonings to your taste by adding more lemon juice, herbs, or seasonings as needed.

Assembling the Wrap

  1. Place a flour tortilla on a clean surface.
  2. Generously spread ranch dressing in the centre of the tortilla.
  3. Add shredded lettuce, diced tomatoes, bacon, and sliced grilled chicken on top of the dressing.
  4. Sprinkle shredded cheese over the chicken and veggies.
  5. Optionally, garnish with fresh herbs (chives, parsley, or dill).
  6. Fold in the sides of the tortilla, then roll it up from the bottom to create a wrap.
  7. Repeat with the remaining tortillas.
  8. If desired, slice each wrap in half diagonally, and serve the Chicken Ranch Wraps. Enjoy!
