Cheddar Egg Bites

Ingredients

  • 9 large eggs
  • ½ cup Beatrice Cottage Cheese 2%
  • 1¼ cups Cracker Barrel Mild Cheddar and Monterey Jack Cheese
  • ¼ tsp each, salt and pepper
  • 1½ cups cooked sausage, chopped
  • ½ cup cooked bacon, chopped
  • 2 green onions, sliced

Directions

  1. Preheat oven to 350°F.
  2. Place a 9 x 13 baking dish half-filled with water on the lowest rack of the oven to create a steam bake environment.
  3. In a blender or food processor, combine eggs, cottage cheese, 1 cup of shredded cheddar cheese, pepper, and salt. Blend until smooth, avoiding over-mixing to prevent air bubbles.
  4. Grease a 12-cup muffin tin with cooking spray or butter. Evenly distribute sausages, bacon, and green onions among the muffin cups.
  5. Pour the egg and cheese mixture into each muffin cup, filling them about 2/3 full.
  6. Gently tap the tin on the counter to remove air bubbles.
  7. Sprinkle the remaining cheese on top.
  8. Bake for approximately 30 minutes or until the egg bites are set and slightly golden on top.
  9. Let them cool briefly, then use a knife or silicone spatula to carefully remove the egg bites from the muffin tin.
  10. Serve warm and enjoy your Cheddar Egg Bites!
