Cheddar Egg Bites

Ingredients
- 9 large eggs
- ½ cup Beatrice Cottage Cheese 2%
- 1¼ cups Cracker Barrel Mild Cheddar and Monterey Jack Cheese
- ¼ tsp each, salt and pepper
- 1½ cups cooked sausage, chopped
- ½ cup cooked bacon, chopped
- 2 green onions, sliced
Directions
- Preheat oven to 350°F.
- Place a 9 x 13 baking dish half-filled with water on the lowest rack of the oven to create a steam bake environment.
- In a blender or food processor, combine eggs, cottage cheese, 1 cup of shredded cheddar cheese, pepper, and salt. Blend until smooth, avoiding over-mixing to prevent air bubbles.
- Grease a 12-cup muffin tin with cooking spray or butter. Evenly distribute sausages, bacon, and green onions among the muffin cups.
- Pour the egg and cheese mixture into each muffin cup, filling them about 2/3 full.
- Gently tap the tin on the counter to remove air bubbles.
- Sprinkle the remaining cheese on top.
- Bake for approximately 30 minutes or until the egg bites are set and slightly golden on top.
- Let them cool briefly, then use a knife or silicone spatula to carefully remove the egg bites from the muffin tin.
