
Brie Stuffed Dates with Bacon and Hot Honey

Ingredients
Dates & Filling:
- 40 Medjool dates
- 500 g Président Brie, cut into 40 equal pieces
- 20 slices bacon, cut in half
Hot Honey:
- 2 cups honey
- 1 tbsp crushed chilies
- 1 tbsp fresh thyme
- ½ tsp cayenne pepper
- 1 tbsp apple cider vinegar
Directions
- Wash hands thoroughly with soap and warm water for 20 seconds.
- Sanitize all work surfaces.
- Use a white cutting board for cheese and bacon prep.
Prepare the hot honey:
- In a small pot over medium heat, bring honey, crushed chilies, cayenne, and thyme to a simmer.
- Remove from heat and stir in apple cider vinegar.
- Allow to cool and transfer to a squeeze bottle.
Prepare the dates:
- If dates are not pitted, slice open and remove pits while keeping the date intact.
- Stuff each date with Brie (rind down) and wrap with half a slice of bacon. Secure with a toothpick.
Bake for initial cooking:
- Preheat oven to 400°F (200°C).
- Bake stuffed dates for 20 minutes.
- Remove from oven and cool. Transfer to fridge until service.
For service:
- Preheat oven and bake orders for 15 minutes.
- Drizzle with hot honey during the last 5 minutes of baking.
- Serve with additional honey drizzle or as a dipping sauce.
- Discard any leftover baked dates after 2 hours at room temperature.
